Delightful Vegan Banana Pudding is Fantastic for You

This vegan banana pudding is a very healthy dessert and it is so yummy.  Like all the recipes on this site, it has no added refined sugar.  It is a very quick, easy to make recipe too, putting dessert easily on the menu for dinner tonight.

Bananas are healthy for you and that’s a good thing since they are the most popular fruit in North America. Everyone loves bananas. There are more songs, jokes, and silliness with this food than with any other plant on earth.  They add a nice silky texture to recipes as well as extra sweetness. This banana pudding is very sweet with the banana and stevia so no sugar needed.

Arrowroot and kudzu are high-quality starches that will add amazing texture and taste to your pudding. I’m happy I discovered them in my macrobiotic (grain-based diet) days. What makes this banana pudding vegan is almond milk. Millions of people are using packaged Almond Milk because they believe it is a ‘healthy milk alternative.’ I make my own almond milk which is easy to do as well as affordable and way better for the environment.  

White Rice Flour – I use this for shortbread and pastry making as it adds a lightness and texture.  It works best when combined with high protein flours to balance texture and build the structure. Caution: Use only small amounts as it has less nutrition than brown and is tending to be starchy.

Now I know that walnuts are also highly nutritious, so much so that I consider them a superfood. They are high in omega 3 fatty acids, are a good source of protein and are rich in minerals. Walnuts add a little crunch to this banana pudding.

Vegan Banana Pudding

This vegan banana pudding is a very healthy yummy dessert.  Like all the recipes on this site, it has no added refined sugar and is very quick to make.

Ingredients

  • 2 bananas
  • 2 cups almond milk (or rice or coconut)
  • 2 1/2 Tbsp arrowroot* or kudzu
  • 2 Tbsp white rice flour
  • 1/4 cup walnuts
  • 1 tsp vanilla
  • 1/4 tsp stevia

Instructions

  • Add 1 1/2 cups milk to a saucepan.
  • Add stevia to taste.
  • Bring it almost to a boiling point.
  • Mix the arrowroot and flour with 1/2 cup milk.
  • Slowly stir in the arrowroot mixture int to the hot milk, stirring constantly.
  •  Boil gently for 5 – 10 minutes until the mixture thickens.
  • Chop the walnuts.
  • Add the mashed bananas and walnuts.
  • Stir in the vanilla.
  • Serve the banana pudding warm or let it cool and serve.

Notes

Variation:  Sprinkle with 1/2 cup toasted coconut at the end.
*a healthy thickener similar to cornstarch but more digestible.
