Broccoli Rice Salad

broccoli Ingredients:

Broccoli, chopped into small pieces*
1 cup salad base
1/4 cup Green peppers or cucumber, chopped
Approx 1 cup cooked brown rice
Lemon/Olive Oil Dressing that you already made

Directions:

1.    Mix ingredients together in a medium bowl
2.    Pour desired amount of Lemon/Olive Oil dressing
3.    Enjoy

* If you do not like raw broccoli as I don’t; lightly steam it before adding it to the salad.

Nutritional Tip:  Broccoli is high in vitamins C, K, and A, as well acting as dietary fiber.

    Dietary fibers helps a lot in preventing colon cancer since they really clean the lining of the intestines. The formation of polyps and tumors are reduced if the intestinal linings are clean.

    I have a bunch of asparagus on hand as well as cooked rice. Lightly steamed asparagus should be a fine substitute for broccoli. I never seem to follow recipes…..

  3. Yes Afke, that sounds great! I am like you I do not follow recipes…..only make them for others. :)
