Avocado Vegetable Dip

There are so many dips available to buy at the grocery store but this is much more healthy,  fresh, and tasty.

Ingredients:
1 ripe avocado, peeled & pitted
1 tsp. onion, finely minced
1 stalk of celery, finely chopped
1 – 2 tbsp. lemon juice
1 tomato, chopped
Nori & Dsulse seaweed flakes to taste

Directions:
1. Mash avocado.
2. Add onion, celery and lemon juice and mix in well.
3. Gently mix in chopped tomato.
4. Serve with corn chips or slices of vegetables.

All my happy taste testers liked it right away but I knew it could be even better…and the following recipe is.

This is a deeply satisfying cake filled with healthy ingredients. Apples being one of them!

Coconut Butter Icing

Finally I had an idea;  it is good and certainly healthier then cups full of icing sugar and butter.  And you know what? It tastes good!

 

Coconut Butter Icing

 

Ingredients:

1/3 cup Coconut oil
1/3 cup Rice syrup
1/2 cup Almond meal
1 Tbsp Arrowroot powder
1 tsp vanilla extract

Directions:

  1. Cream together coconut oil and rice syrup.
  2. Mix in vanilla, almond meal, and arrowroot.
  3. Ice cake after it is cool.

Adzuki Vegetable Bean Stew

This is a simple recipe with one of the easiest to digest beans; adzuki beans. I love them.

Ingredients:
1 onion, finely chopped
3 sticks of celery, sliced
1 zucchini, chopped
2 carrots, sliced
2 – 5 garlic cloves, minced
1- 2 inches of fresh ginger, chopped
1 1/2 cups adzuki beans 
3 pieces of Wakame Seaweed, rinsed and broken into pieces
2 – 6 tbsp. Tamari
Few drops of Stevia (optional)

Directions:
1.    Cook adzuki beans for 1 – 2 hours the time is dependant on the age of the beans. 
  (cook according to this recipe) 

2.    When beans are soft, add Wakame and cook for another few minutes.
3.    Then add onions, celery, zucchini, carrots, ginger and garlic.
4.    Simmer for 1/2 hour or till vegetables are tender.
5.    Add Tamari to taste and a few drops of stevia.
6.    Serve with a whole grain.

Carrots with Arame

Seaweed Recipe for Health

This is a great addition to any meal especially if you like ginger and carrots.

Ingredients:

½ cup arame

2 – 3 tbsp. tamari

½ tbsp. fresh ginger, grated

3 – 5 carrots cut into match stick lengths

 

Directions:

  1. Cover arame with water.
  2. Soak arame for 10 minutes.
  3. Boil, uncovered, arame, tamari, and grated ginger gently till most of the liquid has evaporated.
  4. Add the carrots.
  5. Cover and cook till carrots are slightly tender.
  6. Remove lid and cook till all the water has evaporated.
