green pea soup with mint and tofu
Ingredients:
1 cup fresh or frozen peas
1 cup water
1 cup almond milk or rice milk
1 Tbsp Olive Oil
1 tsp Vege salt or Spike
Directions:
- Simmer the peas in 1 cup of water till soft.
- Add salt, almond milk and olive oil.
- Puree in a blender.
- Serve.
