Recipe: Healthy Potato Salad That is Vegan and Delicious For Your Meal

This is a very healthy recipe for a potato salad that is vegan. I have never liked potato salad because of the commercial mayonnaise used even in homemade salads. First, the commercial mayonnaise creates nausea for me. Secondly, I know from reading the label that those are not the things I want in my body.

Another thing that I never liked about potato salads is that you don’t get lots of other vegetables, to get the right balance of carbs.
This potato salad is not only vegan but also has some other delicious veggies to balance out the starch of the potatoes.

Celery

It is 95% water, very alkaline, and filled with fiber.  Its weight loss benefits are well known but you would be surprised at its other amazing properties.  Celery adds a nice crunch to this potato salad.

Carrots – This orange crunchy superfood is full of Vitamin A. It also has a host of other powerful health benefits including beautiful skin, cancer prevention, and anti-aging. They add a very healthy vegetable to this potato delicious salad.

Beets

Dill

Authentic Olive OilsOlive Oil

Extra-virgin olive oil (cold pressed) is the best fat to use when making a salad dressing.  Best not to use for cooking as it has a low smoke point and heat making it susceptible to oxidative damage.  Olive oil has so many health benefits I include some every day when I eat my salad. Stevia

best steviaI never use sugar in my kitchen. Mostly I use stevia which is the healthy option.  The stevia plant is incredibly sweet and also incredibly good for you.  The leaf is 30 times sweeter than sugar while extracts are 300-400 times sweeter.  The best stevia will, therefore, be the one that retains some whole-food value and is water-based.  Liquid forms will be less processed.  Go here to learn How to Get the Best Stevia Without Bitterness.

Ingredients

  • 3 medium potatoes
  • 1 beet or carrot
  • 2 stalks celery or 1/2 a green pepper
  • chives or green onion to taste
  • Handful parsley or dill weed
  • 1/2 cup Nayonaise or Yogurt Dip
  • 3 tsp Dijon mustard
  • 3 tsp lemon juice
  • 1 tsp Himalayan salt

Instructions

  • Boil the potatoes unpeeled. When they are soft you can dice them once they have cooled.
  • Boil the beet or carrot until you can poke a fork through but they still have some texture. Chop them when they cool.
  • Finely chop the celery or green pepper.
  • Chop the chives or green onion. Finley chop the fresh parsley or dill and salt.
  • Mix all of the vegetables together, keep aside some parsley or dill.
  • Mix the Nayonnaise or Yogurt Dip, mustard and lemon juice together to make the dressing.
  • Mix all of the ingredients together with the dressing.
  • Decorate the top with dill or parsley.
  • Note: You can add more vegetables, and then add more dressing too.
  • Now serve and enjoy your recipe healthy potato salad.

Vegan Yogurt Salad Dressing

This is a simple easy to make vegan yogurt salad dressing that is always enjoyed whenever I serve it. What is so extra good about this salad dressing is that there is no dairy in it and it is creamy.  This is so helpful for those of us who do not do well with dairy.

Ingredients

  • 1 cup plain yogurt almond, coconut or soy milk yogurt.
  • 1/2 cup cold-pressed virgin olive oil
  • 2 1/2 Tbsp lemon juice
  • 1-3 drops light liquid stevia to taste
  • 1/2-1 tsp veggie salt or Himalayan salt to taste
  • dillweed to taste

Instructions

  • Shake all of the above ingredients in a jar; taste it and add more of any of the seasoning ingredients to your taste.

Notes

Note: Do not put in a blender; it will become very liquid.  (Guess you know I did that). 🙂

  1. Well we used 2 carrots instead of one and only used 1 tsp of mustard. It did taste nice, but the main satisfaction for me personally is knowing the quality of nutrition I’m getting.

    I’ll be checking back from time to time to see some more healthy dishes.

  2. I have been a vegan for about 15 years and have been making this potato salad for years, but I left out the mustard. Some I add some cucumber to it or whatever else I have on hand.
