Asparagus Tomato Salad is Luxurious and Tasty

This luxurious asparagus tomato salad was enjoyed so much the first time I created the recipe so I never stopped serving it.

I used parsley because that is what I had but chopped basil or mint would be good too.

This is the main ingredient in this Asparagus Tomato Salad. Asparagus with its high fiber content and low glycemic index is considered a smart carb. It is on the Environmental Working Group’s Clean 15 list of fruits and vegetables with the lowest occurrence of pesticides as it naturally grows so quickly the need for pesticides is reduced. It is a very good source of vitamin K, the B vitamin folate, vitamin C, and vitamin A. and it is filled with B vitamins (B1, B2, B3, and B6).

The red of Tomatoes is what makes them full of health benefits, even when you are enjoying them as a refreshing juice or tomato sauce. Tomatoes are fat burning, help prevent cancer, and are a very heart-healthy food. 

Pine nuts add a wonderful flavour to this Asparagus Tomato Salad. They have many of the same health benefits as other nuts.  In numerous studies, the consumption of nuts was found to lower waist circumference, blood pressure, insulin resistance, and increase high cholesterol.

Olive oil was referred to as “Liquid Gold” by the famous Greek poet Homer.  If you are what you eat, what would happen if you consumed “Liquid Gold” daily?  Extra-virgin olive oil (cold-pressed) is the best fat to use as a salad dressing.  Do not use it for cooking.  It has a low smoke point and heat makes it susceptible to oxidative damage.  Olive oil has so many health benefits I include a little every day when I eat my salad.

Asparagus Tomato Salad

This luxurious asparagus tomato salad was enjoyed so much the first time I created the recipe so I never stopped serving it.
I used parsley because that is what I had but chopped basil or mint would be good too.

Ingredients

  • 15-20 asparagus spears
  • 1 green onion
  • 1/4 cup pine nuts
  • 2 tomatoes
  • parsley
  • fresh cracked pepper optional, to taste

Instructions

  • Remove the bottom inch or two of the asparagus. This part will easily snap off.
  • Steam the asparagus spears for 5-6 minutes or until asparagus is bright green and tender.
  • Chop the green onion.
  • Slice the tomatoes.
  • Rinse the asparagus under cold water.
  • Drain it thoroughly and transfer to a serving bowl.
  •  Arrange the sliced tomatoes in a bowl near the outer edge.
  • Arrange the asparagus spears in the center.
  • Drizzle everything with my Lemon/Olive Oil Dressing.
  • Finely chop some parsley for garnish.
  • Sprinkle with parsley, pine nuts, green onion, and fresh cracked pepper.

Olive Oil Lemon Juice Salad Dressing

This olive oil lemon juice salad dressing is always enjoyed by everyone who has it with one of my salads. I love to eat salads with a healthy salad dressing and always make my own salad dressings.  It is the salad dressing that makes it a healthy or unhealthy salad. A healthy salad is often ruined by drenching it with a highly processed salad dressing from the supermarket.

Ingredients

  • 1 cup olive oil
  • 1/3 cup lemon juice (freshly squeezed is best)
  • 2-4 drops stevia
  • 1/4 tsp Braggs
  • dried herbs or garlic optional

Instructions

  • Blend all of the ingredients in a Blender.
  • Taste and add more of any of the ingredients to your taste.
  • Now pour your 'Olive Oil Lemon Juice Salad Dressing' onto your salad.
  • Now wasn't that simple.
