Leeks and carrots are favourite vegetables in my kitchen. Pairing them with yummy ginger and garlic makes a very refreshing delicious addition to a dinner meal. Also, all these ingredients are very nutritious for you too. In fact, almost all of the ingredients are superfoods.
Leeks are full of health benefits! Before living in England, I had never heard of or seen leeks but now they are in all the supermarkets here. They are one of the many healthy superfoods to include in our meals. Leeks belong to the same family as onions and garlic. Leeks and carrots are what make this recipe delicious.
Carrots with leeks are a delicious combination. With this orange crunchy superfood, you get Vitamin A and a host of other powerful health benefits including beautiful skin, cancer prevention, and anti-aging.
To get the most health benefits from Garlic, let it sit for a minimum of 5 minutes, after cutting and before eating or cooking. Waiting for 5 – 10 minutes allows the health-promoting allicin to form. If you do not let it sit, allicin is never formed, so it is worth the wait.
Ginger is a wonderful herb superfood full of health benefits. Spicy aromatic ginger adds a unique flavour to meals and beverages. The many wonderful health benefits of ginger also cause the cells of my body to glow with gratitude. I love the addition of ginger to this yummy leek and carrot recipe.

Avocado oil is delicious and versatile: With a high smoke point, avocado oil can be used for high heat cooking and baking as well as in dressings and sauces. I used it to create this delicious leeks with carrots recipe.
The first time I served Leeks and Carrots with Ginger for dinner, it was enjoyed so much that I promised to make it again real soon.
Leeks and Carrots with Ginger and Garlic
Ingredients
- 1 medium leek
- 2 medium carrots
- 2 Tbsp avocado oil
- 2-3 garlic cloves chopped
- 1 inch fresh ginger finely chopped
- Himalayan salt and black pepper to taste
Instructions
- Clean up the leeks, and then slice them thinly, widthways. Place them in a colander and rinse them with cold running water to get all the dirt off, then drain well.
- Grate the carrots on the coarse side.
- Heat the oil in a large frying pan over moderate heat.
- Chop the garlic and ginger, finely.
- Add the leeks, garlic, and ginger to the frying pan and cook for 5 – 6 minutes, until the leeks begin to wilt.
- Mix in the grated carrots and add salt and pepper to taste.
- Cook for 3 more minutes and remove from heat.
- Now serve and enjoy your carrots and leeks!

If you enjoy carrots, here’s a variation. I used to cook this as a side. Leeks are available easily now but they are not everyday vegetable in India, so neighbourhood vendor may not have them. Carrots however are very popular, esp red carrots which are sweeter. Orange carrots are best enjoyed grated as they have a less sweet taste.
1 or 2 carrots grated
1 cup peanut powder
a tspn of musterd seeds
2 tspn of sesame seeds
Salt
Green chilly crushed (optional)
Oil ( vegetable oil)
Temper oil with mustard seeds. Lower heat. Add half cup sesame seeds. Add carrots, salt and chillies. Saute for two min. Add peanut powder. Mix well. Add remaining sesame seeds. Take off the heat when carrots change colour.
Total cooking time is usually 3-6 min depending on the kind of carrot used.
