I created this yummy olive salad appetizer recipe just this week and it truly was tasty. I love the colourful salad it became with the addition of the red peppers and green chives. Food needs to have a range of colours to be tasty. Also. this is a healthy olive salad that is great as an appetizer or a side for your meal. It is even great for a party.
Olives are full of antioxidants and anti-inflammatory phytonutrients as well as a number of flavonoid and phytonutrients. They are a very good source of copper, iron, dietary fiber, and vitamin E.
Red pepper is my favourite; I think that is because it is sweeter. Peppers have 2 times as much vitamin C as oranges; red and yellow peppers have 4 times as much.
Lemons’ health benefits are immense. To begin they are acidic to the taste but are alkaline-forming in the body. In fact, they are one of the most alkaline-forming superfoods; this makes them great for balancing a highly acidic condition in the body. Also, they are full of many health benefits.
Olive oil was referred to as “Liquid Gold” by the famous Greek poet Homer. If you are what you eat, what would happen if you consumed “Liquid Gold” daily? Extra-virgin olive oil (cold-pressed) is the best fat to use as a salad dressing. Do not use for cooking. It has a low smoke point and heat makes it susceptible to oxidative damage. Celery is a negative calorie food, meaning it takes the body more calories to digest it than the food itself contains making it a very good food for weight loss. One stalk of celery has only a few calories because it is full of healthy cellulose. It is 95% water, very alkaline and filled with fiber. Its weight loss benefits are well known but you would be surprised at its other amazing properties.
Olive Salad Appetizer
Ingredients
- 1/3 cup black olives
- 1/3 cup green olives
- 1 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1 tsp Italian herb seasoning
- 1 stalk celery
- 3/4 cup red pepper
- Handful chives
Instructions
- Put the olives, lemon juice, olive oil, and Italian Seasoning in a bowl and mix together.Let it sit for at least 30 min.
- Chop the celery and red pepper.
- Finely chop the chives.
- Mix in the celery and red pepper.
- Sprinkle with chives.
- Now serve and enjoy your olive salad appetizer.
