Vegan Papaya Pudding
Ingredients
- 2 cups papaya
- 1 tsp vanilla extract
- 1/2 cup cashew nuts
- 1/2 Tbsp chia seeds
- 1/4 cup coconut milk
- 1 tsp honey or a few drops of liquid stevia
Instructions
- Chop the papaya and put aside 1/2 a cup for use later.
- Blend the papaya in a blender.
- Add the cashews, chia seeds, honey, coconut milk and vanilla, and blend until creamy
- Put the mixture in the refrigerator for 20 to 40 minutes to thicken
- Simply mix the half cup of chopped papaya into the pudding.
- Now enjoy your creamy papaya pudding.
