Pears the star ingredient in this cake has more nutrients per calorie than calories per nutrient (surprising since they are so sweet). They are what I call a Smart Carb. and are a good source of dietary fiber, vitamin C, copper & vitamin K. They are often considered hypoallergenic fruit that is less likely to produce an adverse response than other fruits by healthcare practitioners making them a great first fruit fed to infants as a safe way to start.
Kale is a great detox food that is full of fiber and low in cholesterol. It supports normal blood clotting, antioxidant activity, and bone health while nourishing the immune system.
Pumpkin seeds are so good that I add them to many of my meals. The bonus nutrient value is that they are the only seed that is alkaline-forming. Filled with lots of minerals, are a good source of vitamin k and zinc, and contain phytosterols and L-tryptophan. They are also a great source of vitamin e and vitamin b while being a great protein.
