Delicious Radish Quinoa Salad with Arugula

This colorful radish quinoa salad is a yummy and nourishing salad for any season. It is full of good protein from the quinoa. It is a whole meal in one bowl. How easy is that for dishwashing!

There are many health benefits of quinoa. It is gluten-free because it is not a grain, it is a vegetable seed related to Swiss chard, spinach, and beets. Quinoa is pronounced KEEN-wa not kwin-o-a. It is filling like a grain and has much more protein than grains and is considered a smart carb. It is an antiseptic alkaline-forming food that is low in calories and is a great source of riboflavin.

Arugula with its aromatic, peppery flavour adds a wonderful dimension to a salad and to your sex life too. It is also known by other names such as salad rocket, garden rocket, roquette, rucola, rugula, or colewort. It is creat for cleansing and detoxifying the body as well as reducing inflammation.

The red of Tomatoes is what makes them full of health benefits, even when you are enjoying them as a refreshing juice or tomato sauce. Tomatoes are fat burning, help prevent cancer and are very heart-healthy food. 

Olive oil was referred to as “Liquid Gold” by the famous Greek poet Homer.  If you are what you eat, what would happen if you consumed “Liquid Gold” daily?  Extra-virgin olive oil (cold-pressed) is the best fat to use as a salad dressing.  Do not use it for high heat cooking.  It has a low smoke point and heat makes it susceptible to oxidative damage.  Olive oil has so many health benefits I include a little every day when I eat my salad and it is good in asparagus with lemon juice recipe.

Celery is a negative calorie food, meaning it takes the body more calories to digest it than the food itself contains making it a very good food for weight loss.  One stalk of celery has only a few calories because it is full of healthy cellulose. It is 95% water, very alkaline, and filled with fiber.  Its weight loss benefits are well known but you would be surprised at its other amazing properties.

Radishes have a sulfurous mustard oil in them that stimulates the circulation system as well as the liver and kidneys to help with a detox. They are very good for the skin because of high sulfur, silicon, and vitamin C content. They are a good source of fiber.

Radish Quinoa Salad with Arugula

Ingredients

  • 1 cup cooked quinoa
  • 2 handfuls arugula
  • 3-4 small tomatoes
  • 6-8 radishes
  • 2 celery stalks
  • 1/4-1/3 cup olive oil salad dressing

Instructions

  • Chop the celery stalks and the radishes. Slice the tomatoes.
  • Mix all of the vegetables together in a bowl.
  • Mix in the Salad Dressing
  • Add the cooked quinoa to the bowl.
  • Now sit down and enjoy this delicious salad.
