Sauteed Zucchini With Olives For Dinner

I love this dish of sauteed zucchini with olives because both of those foods are so tasty. Together they make a very tasty meal. Zucchini has always been high on my list of favourite vegetables and put together with olives, it is a very yummy meal.

Sautéed Zucchini With Olives Recipe

Ingredients:

2 tablespoons almond oil or coconut oil
4 cups zucchini, trimmed and cut into 1 inch cubes
2 large garlic cloves, sliced
2 tsp chopped fresh rosemary
1⁄2 cup halved pitted Kalamata olives

Directions:

  1. Heat oil in large frying pan over medium-high heat.
  2. Add zucchini, garlic, and rosemary.
  3. Sprinkle with salt and pepper.
  4. Sauté until zucchini is a little golden brown, about 5 minutes.
  5. Add the olives.
  6. Remove from heat and serve.
