Simple Nutritious Spinach Salad with Sunflower Seeds

This spinach salad is super nutritious and with only 2 main ingredients, it is a fast salad to make.

Spinach was a superfood even before there was the term superfood.  I’m referring of course to Popeye the Sailor Man. One can of the green stuff and he turned into muscle popping tornado of energy. Even without Popeye’s recommendation, spinach contains more nutrients per calorie than any other food on the earth. It is loaded with vitamins like A, K, D, and E and a host of trace minerals and is a good source of omega 3 fatty acid.

Delicious nutty sunflower seeds are a popular snack that is undervalued.  They may be small but sunflower seeds are a dense source of nutrients and full of extraordinary health benefits. They are for sure a healthy superfood.

Olive oil was referred to as “Liquid Gold” by the famous Greek poet Homer.  If you are what you eat, what would happen if you consumed “Liquid Gold” daily?  Extra-virgin olive oil (cold-pressed) is the best fat to use as a salad dressing.  Do not use for cooking.  It has a low smoke point and heat makes it susceptible to oxidative damage.  Olive oil has so many health benefits I include some every day when I eat my salad. Olive Oil Salad Dressing -This olive oil lemon juice salad dressing is always enjoyed by everyone who has it on one of my salads. This is why I created the exact recipe years ago.

It is important to have a healthy salad dressing because it is the salad dressing that makes it a healthy or unhealthy salad.  I love to eat salads with a healthy salad dressing and always make my own salad dressings.

Ingredients

  • 2 handfuls baby spinach
  • 1/4 cup toasted sunflower seeds
  • olive oil salad dressing

Instructions

  • Put the spinach on a plate.
  • Toss it with my Olive Oil Salad Dressing to taste
  • Sprinkle it with toasted sunflower seeds.
  • Serve and enjoy.
