Spring Cleanse Spinach Salad
Ingredients
- 6 cups or 1 pound fresh spinach
- 4 inches cucumber
- 2 celery stalks
- 1/4 cup pumpkin seeds toasted
- 2 mandarin oranges
- 2 Tbsp lemon juice
- 1/4 cup olive oil
- few drops liquid stevia
- Tamari or Braggs to taste
- 1 avocado
- 1-3 garlic cloves
Instructions
- Wash and trim the spinach; pat dry with paper towels.
- Roast the pumpkin seeds until golden.
- Crush or chop the small garlic cloves.
- Dice up the avocado.
- Combine lemon juice, oil, stevia, garlic, and Tamari or Braggs in a jar; mix in the diced avocado, coating well with the dressing.
- Peel the mandarin orange and separate it into sections.
- Chop the celery and the cucumber for the salad.
- Toss together the spinach, cucumber, and celery with avocado and dressing.
- Add the mandarin orange sections and pumpkin seeds.
- Now toss spinach salad again.
- Enjoy your spring cleanse spinach salad.
