Watermelon Soup For a Summer Meal is Tasty

A bowl of cold watermelon soup is refreshing and is a very simple soup for one of those ‘hot’ days. Also, you will get all the wonderful nutrients and health benefits from the superfoods watermelon, lemons, mint, and stevia.

Watermelon is great for cleansing, weight Loss, packed with nutrition, and is delicious too.  It is an inexpensive way to help you cleanse your body and lose weight.   One cup of watermelon has only 47 calories.

In addition to weight loss, watermelon is a great source of energy and nutrients for your body. Watermelon is recommended by the American Council on Exercise as a good choice of diet food.

Lemons’ health benefits are immense.  To begin they are acidic to the taste but are alkaline-forming in the body. In fact, they are one of the most alkaline-forming superfoods; this makes them great for balancing a highly acidic condition in the body. Also, they are full of many health benefits.

Cool fresh mint with its stimulating aroma is a popular flavouring for gum, toothpaste, and tea.  This superfood is full of many health benefits from helping with digestion to increasing memory. Did you know it helps keep mosquitos away too?  I always grow mint in my garden for salads, teas, and smoothies.

Ingredients

  • 4 cups watermelon
  • 2 Tbsp lemon juice
  • 2 Tbsp fresh mint
  • few drops stevia optional

Instructions

  • Cut up the watermelon into cubes and take out the seeds.
  • Blend the watermelon, lemon juice, 1 Tbsp mint, and stevia in a blender until smooth.
  • Chop the mint and Sprinkle chopped mint on top of bowls of soup.
  • Now enjoy a tasty bowl of watermelon soup.
